Dragonfly Cider
This is our draught cider sold in either 3L and 5L pouches or 20L Bag in Boxes (BIBs)


The Apples
We use the apples from out orchard which means each year the blend is slightly different depending on abundance. We have over 25 heritage varieties in our orchard
The apples are collected by hand then washed, milled and pressed using the traditional sack and cloth method. You can see what is called the 'cheese' in the photo.


The Ferment
The juice is transferred into containers for fermentation. The rosé juice seen here is a combination two heritage varieties, Sops in Wine and Foxwhelp. Fermentaiton usually takes between two and fours weeks afte which is is racked and matured for four months before blending.
